Linyi bakery adds braised chicken to mooncake fillings

A bakery in Linyi, Shandong, is giving the traditional mooncake a savory twist. Jimi Xingfu Food in Luozhuang district has created a braised chicken mooncake, filling the festive pastry with the flavors of Linyi's signature dish.

The company, led by Cao Baowei and his wife Lin Yanqin, draws on five generations of baking expertise. "We hold weekly innovation meetings and encourage every employee to share ideas," Cao said.

The braised chicken mooncake uses chicken thigh meat prepared in the traditional Linyi style. After six or seven trials — including an unsuccessful attempt with chicken breast — the final recipe won positive feedback during trial sales.

The bakery also produces mooncakes featuring Linyi landmarks, making local culture both edible and giftable. "Linyi braised chicken represents our local flavor," Lin said. "We hope this helps more people discover Linyi."
